CUCUMBER SALAD
INGREDIENTS:
- Sesame Oil 2 tsp
- Honey/agave 1 tsp
- Vinegar 1 Tsp
- Lime Juice 2 Tsp
- Salt to taste
- 4 Persian cucumbers, cut into small cubes
- 1/2 Red onion, thinly sliced
- 1 clove of garlic, minced
- Crushed red pepper to taste
- Cilantro, finely chopped: 3-4 Tbsp
- Toasted sesame seeds for garnish 1 tsp
METHOD:
- For the dressing, add sesame oil, honey, vinegar, lime juice, and salt to a small mixing bowl. Whisk until well combined
- Add garlic, cucumber and red onion
- Pour the dressing over the cucumber salad and toss until well-coated
- Chill in the refrigerator for 1-2 hours
- Garnish with cilantro, sesame seeds, and crushed red pepper flakes before serving
- Serve cold with scoopable tortilla chips or just enjoy as is
